Recipe Roundup: Fall Dishes

written by NOA DIAMOND. October 11th, 2020

I am a firm believer that there are no bad cooks, only people who don’t follow the recipe. If you don’t know what flavors and foods go best together, there are plenty of talented chefs out there who have already figured that out for you. But to save you some time looking for those, here are my fall recipe picks.

@rachlmansfield’s Vegan Pumpkin Alla Vodka Sauce

I have recently gone dairy free and let me tell you it is not as hard as I thought it would be. One thing I started missing was how easy it is to by a bottle of pre-made vodka sauce (my favorite sauce) for pasta dishes because they all seem to contain dairy! Enter Rachl Mansfields vegan vodka sauce that is just as creamy without the cream.

@brocyourbody’s Fall Chopped Salad

I always struggle finding ways to elevate the simple salad. If i’m going to have a salad for a meal, it better be flavor and filling. Broc Your Body recently dropped her favorite meatless salad recipe and it is the pinnacle of fall. I’m also sold as soon as I hear sweet potato is an ingredient in any dish.

@halfbakedharvest’s Coconut Sweet Potato Lentil Soup

I’m not a huge soup girl because I find generic soups like chicken noodle to be sooo boring, and bland. But like I mentioned, add sweet potato and I’ll reconsider. This soup is so hearty and perfect for fall. It’s all you need and more.

Paleo Running Mama’s Dairy-Free No-Churn Chocolate Peanut Butter Ice Cream

While you do have to plan ahead for the chilling time, this homemade dairy-free ice cream is a real winner and so easy to make. The ingredients are clean, and simple, and you likely already have most of them at home!

Cookie and Kate’s Spaghetti Squash

I just recently made spaghetti squash for the first time and boy was I missing out. The only tough part is cutting the squash in half, but once you taste the dish you see how worth the struggle it is. Pair this recipe with your favorite pasta sauce and add whatever type of meat and veggies you like for a beyond delicious meal.
