When I was in Israel last summer, I dreamt of eating at Miznon each night. It was a little shack on the corner of my street that served the most amazing Israeli cuisine. Whether it was as an after class snack, lunch, or dinner, I tried to fit in as many Miznon Cauliflower Pitas as I could during my seven week stay.
During quarantine, all I could think about was Miznon, once again, and I decided to DM the official instagram to see if they would share any recipes with me. I woke up the next morning with a response. But not a very detailed one. It went something like: Cook the cauliflower, mix it with tahini and stuff it in a pita. I knew there was so much more to it. But I had to start somewhere. After making it at least 5 times since, I think I have finally mastered the recipe to share with anyone else who might be needing a little Israeli food in their life.
Ingredients:
- One head of a cauliflower
- About 1 cup of tahini
- 2 small roma tomatoes diced
- Chopped green onion
- Pita
- Lemon juice
- Salt to taste
Instructions:
Step 1: Preheat oven to 450 degrees
Step 2: Boil your cauliflower for about 7 minutes (or until you are able to pierce it with a fork).
Step 2: Once the cauliflower has cooled, massage it with oil and salt.
Step 3: Bake the cauliflower for 30-40 minutes (or until the top is golden brown and charred at some parts). Cooking times may vary depending on the size of the cauliflower and if it is whole or pre chopped.
Step 4: When the cauliflower has about 10 minutes left in the oven, begin mixing the diced tomato, chopped green onion, tahini, salt, and the juice of half a lemon in a medium bowl.
Step 4: Once the cauliflower is out of the oven and cooled a bit, chop it into bite-sized pieces and add it to the tahini mixture.
Step 5: Cut your pitas in half and toast them on a grill, toaster oven, or stove. If gluten free, no need for the pita. The mixture tastes delicious on its own.
Step 6: Spoon the combined cauliflower mixture into the toasted pitas.
